Unlike green teas black teas are allowed to ferment for many hours before the are either smoke fired ( Lapsang Souchong), flame
fired or steamed. Partial fermentation gives Oolong tea more color and flavor than green teas while
preserving most of the chemical structure. There are many varieties and origins of Oolong teas while most of them are manufactured in China and Taiwan. Other countries are involved in production of superb semi oxidized teas -
Darjeeling Oolong from famous
Makaibari estate. Tea fermentation does not produce alcohol. Enzymes in tea turn tea leaves dark brown similar to the leaves fallen from the tree - or cut apple turning brown.
